Why it matters

Jean Galatoire founded the restaurant in 1905, bringing family recipes and a dining style inspired by Pardies, France. The official site calls it one of New Orleans' most beloved old-line restaurants.

It is no longer solely family-owned. Since 2009 the owners have included Galatoire descendants and several businessmen, with Melvin Rodrigue as CEO.

Friday lunch is its best-known ritual. Saveur and Resy describe regulars who wave away the menu and ask for a favorite waiter.
